Vegetarian Soy Meat Curry 🌱🔥 Using Malu Soy (Devilled Prawn Flavor) Ingredients • 1 pack Lanka Soy Malu Soy • 2 large shallots (or 4-5 small) or ½ red onion, chopped • 5 garlic cloves, chopped • Thumb-size ginger, chopped/crushed • 1 tsp chili powder • 1 tsp Jaffna curry powder • ½ tsp turmeric powder • 2 tbsp soy sauce • Tomato sauce from the pack • Spice mixture from the pack • 2 tbsp coconut oil • 1 tsp mustard seeds • 10-15 curry leaves • 2 large 1-inch pandan leaves • Green chilies (for heat) • Salt to taste Method 1. Soak soy meat in hot water, then squeeze out excess water using a tea towel. 2. Heat coconut oil in a clay pot or pan. Add mustard seeds, curry leaves, pandan leaves, garlic, ginger, green chilies, and shallots. Stir fry until fragrant. 3. Add dried soy meat, cook for a few minutes, then add chili powder, Jaffna curry powder, and turmeric. Mix well. 4. Add soy sauce and tomato sauce from the pack. Mix everything and taste for salt.
