Instructions

Step 1
In a large pot, heat 3 tbsp oil on high heat until hot and then shimmer. Add onion and garlic, and sauté until golden, about 4 minutes. Stir in tomato paste, cumin, salt, black pepper, chili powder, or cayenne, and sauté 2 minutes longer. Add broth, lentils, and carrot. Bring to a boil then partially cover pot and turn to medium low. Simmer until soft, about 30 minutes. Taste and add spice to taste. Using an immersion blender or food processor, puree half and then add back into pot. Soup should be somewhat chunky. Reheat soup as necessary, then stir in lemon juice and cilantro. If desired, serve dusted with chili powder.
