Ingredients
4 servings

1 cupzucchini
packed, grated

0.25onion
grated or finely chopped

2 Tbspdill
chopped

2 Tbspparsley
chopped

2scallions
white and light green parts finely chopped

1egg
lightly beaten

40 grcheese
feta or kefalograviera or pecorino, crumbled

½ cupbreadcrumbs
or flour, or half and half

1 tspbaking powder

salt

pepper

Instructions
Step 1
Grate the zucchinis and place them in a coriander over a bowl
Step 2
2. Sprinkle with salt and let sit for at least an hour (even better if you leave overnight)
Step 3
3. Squeeze out the excess moisture from the zucchini and place back into the bowl (it takes a lot of time but trust me, if you want crispy fritters, the less moisture from zucchini the better)

4. Add the herbs and the onion and mix to combine

5. Add the egg, the EVOO, the baking powder and the breadcrumbs or the flour until dough comes together (it may need a little bit more flour depending on how much water is left at the zucchinis)

6. Add the cheese and mix

7. Put the mixture in the fridge for about one hour

8. Form dough into patties

9. Heat canola or sunflower oil in a skillet over medium high heat
Step 10
10. Fry the patties until golden brown on both sides and cooked through but still moist, about 3-4 minutes per side

11. Serve hot with tzatziki or yoghurt
