Instructions
Step 1
Let’s start by carefully cleaning our fresh carrots, removing the ends and scraping off the peel.
Step 2
Next, use a vegetable peeler to slice them into very thin strips.
Step 3
Place the carrot strips in a shallow dish and season to taste; I used a drizzle of olive oil and some thyme. Give everything a good mix.
Step 4
Arrange the carrots on a baking sheet and bake for 30 minutes at 180°C (350°F).
Step 5
In the meantime, prepare a healthy dip to pair with the crispy carrot chips by combining a jar of Greek yogurt with half an avocado.
Step 6
Once out of the oven, they’re ready to be enjoyed as a snack or a side dish.
