Instructions
Step 1
season steak all over, add to sous vide bag with herbs
Step 2
sous vide at 130 for 60-90 minutes, remove from water and bag
Step 3
Pre-heat cast iron for 5-10 minutes until VERY hot
Step 4
pat steak dry, add herbs and juices to pan sauce if you are making one
Step 5
add high smoke point oil to pan, sear for 45-60 seconds per side
