Ingredients

2 Tbspcanola oil
1brown onion
finely chopped
2garlic cloves
finely chopped
1red capsicum
1cm squares
2 Tbsptomato paste
500gbeef mince
1 cuprice
uncooked
560mlchicken stock
400gblack beans
drained
Spice Mix
½ tspcayenne pepper
1 ½ Tbspdried oregano
1 Tbspground cumin
1 Tbspground coriander
1 Tbsponion powder
2 tspsmoked paprika
1 ½ tspcooking salt

Instructions
Step 1
Mix all spice ingredients together and set aside
Step 2
After chopping, cook onion, garlic and capsicum on pan with high heat for 3 mins or until onion is soft
Step 3
Add beef mince and cook until you no longer see pink
Step 4
Add 3 tbsp of spice mix and stir for 1 minute
Step 5
Stir in the tomato paste
Step 6
Add rice, chicken stock and the remainder of the spice mix
Step 7
Add in black beans on top but do not stir
Step 8
Once the liquid comes to simmer, put the lid on top and lower the heat to low. Cook for 14 mins or until liquid has been fully absorbed
Step 9
Remove pot from stove and rest for 12 minutes with lid on
Step 10
Remove lid and stir gently to mix the ingredients

Lay the tortillas on a workspace and two pieces of cheese (broken in half on the bottom third of the tortilla. Add 1 cup of the mixture and wrap together. Roll into shape of a log and pack tightly. Repeat for each tortilla
Step 12
Heat oil on fry pan and pan fry Burritos to make them crispy and golden. About 1.5 mins each side (4 sides)
Step 13
Serve with salsa if desired
