One Pot Cajun Chicken and Rice

Instructions

Step 1
Cut small chicken thighs into 2 pieces and larger ones into 3 pieces
Step 2
Mix seasoning ingredients in a small bowl
Step 3
Sprinkle chicken with 3/4 teaspoon salt and 5 teaspoons of the Cajun seasoning coating both sides
Step 4
Use big cast iron pot. Sear chicken for 2 mins on one side and 30 seconds on the other. Transfer to plate
Step 5
Add onion, garlic, capsicum and cook for 3 mins. Add remaining Cajun seasoning and rice and stir for 30 seconds. Add stock and salt for 30 seconds. Add chicken back. Reduce heat to low and cook for 15 mins - do not stir or open lid
