Dan Dan Sauce
3 TbspChinese Sesame Paste
3 Tbspchilli oil
or chilli crisp
6 Tbspsoy sauce
2 Tbsphoney
½ tspchinese five spice powder
2 Tbspchinese black vinegar
200mlwater
hot
1 tspbouillon powder
Topping
1 Tbspvegetable oil
300gplant based mince
3cloves garlic
finely chopped
1 Tbspshaoxing wine
1 tspchilli crisp
1 ½ Tbsphoisin sauce
1 tspdark soy sauce
¼ tspChinese five spice powder

Instructions
Step 1
Toast the sichuan peppercorns, then blend them in a spice grinder.
Step 2
Combine the Dan Dan sauce by using the hot water to loosen the sesame paste and honey, then add the rest of the ingredients and allow to cool to room temperature.
Step 3
Cook the Dan Dan noodles in boiling water for the time specified on the packet. Drain and throw them immediately into ice water.
Step 4
Put it all together. Drain the noodles and toss with the Dan Dan sauce, the radishes and the baby cucumbers. Serve the Dan Dan noodle salad topped with spring onion, peanuts, the topping, sprinkled with Sichuan peppercorn powder, and finally topped with a few leaves of lettuce heart.
