Instructions
Step 1
1. Slow cooker: Stir together the garlic, brown sugar, cumin, oregano, orange juice, pineapple juice, and lime juice. Arrange chicken in the bottom of the slow cooker and season with salt and pepper. Pour seasoning mixture over top. Stir to coat the chicken. Cook on low for 4 hours. Shred chicken and let hang out in the sauce for 15 minutes.

2. Oven: Preheat the oven to 400 degrees. Spray a glass baking dish with cooking spray. Stir together the garlic, brown sugar, cumin, oregano, orange juice, pineapple juice, and lime juice. Arrange chicken in the bottom of the baking dish and season with salt and pepper. Pour seasoning mixture over top. Stir to coat the chicken. Bake for 25-35 minutes until chicken is cooked through and shred easily.
Step 3
3. To make the salsa: Meanwhile make the salsa by tossing together the mango, cilantro, red onion, lime juice, salt, and pepper. Serve on top of the chicken.
