Instructions
Step 1
Preheat grill or grill pan to medium-high heat.
Step 2
Brush eggplant slices with olive oil and grill for 2-3 minutes on each side until tender.
Step 3
In a bowl, mix spinach, ricotta, Parmesan, garlic, salt, and pepper.
Step 4
Spread the mixture onto each eggplant slice, roll up, and secure with a toothpick.
Step 5
Place rolls back on the grill for 2-3 minutes to warm through. Serve warm.
