Instructions
Step 1
Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until fragrant, about 5 minutes.
Step 2
Add chopped tomatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the tomatoes break down.
Step 3
Add fresh basil, salt, and pepper, then use an immersion blender to puree the soup until smooth. (Alternatively, blend in batches in a regular blender.)
Step 4
If desired, stir in heavy cream for a creamier texture.
Step 5
Serve hot with additional basil for garnish.
