Ingredients
6 servings
3boneless skinless chicken breasts
1 ½ cupswhite rice
15 ozcan corn
drained
1 cupreduced fat shredded Monterey cheese
¾ cupsalsa
¾ cuplight sour cream
¾ cuppico de gallo
¾ cupguacamole
0.5 headlettuce
shredded
¼ cupcilantro
chopped
¼ cuplime juice
¼ cupwater
1 Tbspolive oil
1 Tbspwhite vinegar
1 Tbspgarlic powder
½ Tbsponion powder
1 tspsalt
1 tspchipotle powder
¼ tspcumin
¼ tspchile powder
1 packsazón
Instructions
Step 1
Slice your chicken breasts in half horizontally.
Step 2
Mix your seasonings, olive oil, water, and vinegar in a bowl together. Whisk until combined.
Step 3
Put chicken breasts in bowl of seasonings and coat very well and let sit for 1 hour or overnight in the fridge. Cook chicken in air fryer for 10 minutes in air fryer at 375.
Step 4
Cook rice and add lime juice and cilantro when done and portion into 6 portions.
Step 5
Slice and dice your chicken and portion it onto your rice and then add your corn.
Step 6
Serve with guacamole, sour cream, salsa, cheese, pico, and lettuce. Enjoy
