2 Tbsppeanut butter

¼ cupcoconut milk

1clove garlic
minced

0.5shallot
grated or minced

½ Tbspsoy sauce

1 tspmaple syrup

1 tspsriracha

Instructions
Step 1
Combine the satay sauce ingredients in a small bowl.
Step 2
Heat oil in a frying pan, cooking the halloumi slices until browned (about 4 to 5 minutes on each side).
Step 3
Meanwhile, place the salad ingredients in a large bowl. Add the pesto and mix thoroughly until combined.
Step 4
Serve the salad in bowls topped with the cooked halloumi, then drizzle over the satay sauce.
