Instructions
Step 1
Fry the bacon in a 12-inch skillet over medium heat until crisp, then transfer to a plate.
Step 2
Drain most of the bacon fat from the skillet.
Step 3
Add the onion, carrot, juniper berries and 1/4 teaspoon salt to the fat left in the
skillet and return to medium heat. Cook until the onion softens, about 5 minutes.
Stir in the sauerkraut, broth, apple, and brown sugar and bring to a simmer
Step 4
Add the crumbled bacon, cover and simmer over low heat until most of the liquid
has evaporated, about 30 minutes. Discard the juniper berries and season with salt and pepper to taste before serving.
