Step 1
Fry the bacon in a 12-inch skillet over medium heat until crisp, then transfer to a plate.
Step 2
Drain most of the bacon fat from the skillet.
Step 3
Add the onion, carrot, and salt to the fat left in the skillet and return to medium heat. Cook until the onion softens, about 5 minutes. Stir in the sauerkraut, broth, apple, and brown sugar and bring to a simmer
Step 4
Add the crumbled bacon, cover and simmer over low heat until most of the liquid has evaporated, about 30 minutes. Season with salt and pepper to taste before serving.
