Instructions

RED PESTO

Step 1
Put roasted bell pepper, sun-dried tomatoes, smashed garlic cloves, tomato paste, marcona almonds, fresh basil leaves, grated parmesan cheese, ground black pepper, olive oil, and pasta water into a food processor and blend until you have a smooth pesto-like consistency.

Step 2
Scrape pesto into a bowl or tupperware container and set aside

PASTA

Step 3
Add 1 tablespoon of salt to a pot of boiling water and boil the ziti pasta

Scoop out 2 cups of the pasta water and set aside

Drain the pasta and set aside in a bowl

PASTA SAUCE

Step 6
Dice the shallots

Pour oil and/or butter into a large pan and coat the surface

Cook the shallots in the pan on medium-high heat until translucent

Add minced garlic and continue cooking until lightly browned

Add 5 heaping tablespoons of red pesto and mix in thoroughly

Add heavy cream and stir in until you reach a slight simmer

Add 1/4 cup grated parmesan cheese and stir in

Add cooked ziti pasta

Add another 1/4 cup grated parmesan cheese and stir in with the pasta

Add a 1/2 cup of pasta water and stir in

Continue to cook at medium heat (a mild simmer) until the sauce thickens

Serve the pasta with pesto and garnish with light sprinkling of shredded parmesan and minced parsley
