1 lbground beef

3 Tbspolive oil

Instructions
Step 1
1. Preheat oven to 350 degrees. Drizzle 1 tbsp olive oil in a 9x13 baking dish and spread around to coat the dish or spray with non-stick spray.

2. Boil lasagna noodles according to package instructions. Drain once cooked and place on a sheet pan drizzled with olive oil so the noodles do not stick together.

3. In a large skillet over medium heat, sauté ground beef and diced onion in 1 tbsp olive oil until meat turns brown and onions are soft. Be sure to break the meat into very small pieces as it cooks. Drain any excess fat, then add crushed tomatoes, Italian seasoning, and garlic and simmer for at least 10 minutes.

4. Cook frozen spinach according to package instructions then cool and squeeze out excess liquid.

5. In a bowl stir together ricotta, eggs, 1 cup of shredded mozzarella cheese, and cooked and cooled spinach.
Step 6
6. Pour 1 cup of tomato meat mixture into the bottom of the baking dish, then top with 3 cooked lasagna noodles. Spread 1/2 of the cheese mixture, then another layer of sauce, 3 noodles, rest of the ricotta, 3 more noodles, and rest of the sauce.
Step 7
7. Bake in the oven for 45 minutes covered in foil. Then remove foil, top with 1 cup of mozzarella cheese and bake for another 10-15 minutes until cheese is melted.

8. Remove from the oven and let cool for at least 15 minutes before cutting and serving.
