Penne with Chipotle Tomato Sauce

Instructions

Step 1
Cook Penne: Cook pasta according to package instructions. Drain and set aside.
Step 2
Sauté Onion: If using onion, sauté in olive oil until softened.
Step 3
Make Sauce: Add tomatoes (or sauce) and finely chopped chipotle peppers. Simmer for 5–10 minutes. Adjust heat/spiciness by adding more or less chipotle.
Step 4
Combine: Toss cooked penne with the sauce. Stir in mozzarella cheese until melted.
Step 5
Serve: Season with salt and pepper.
