Step 1
In a large pot, heat olive oil or butter over medium heat. Add diced onion and saute until softened about 3-4 minutes. Stir in the minced garlic, smoked paprika and dried thyme cooking for another minute until fragrant.
Step 2
Cook the vegetables: add the diced carrots and cauliflower florets to the pot. Season with a pinch of salt and pepper. Stir well and cook for 5 minutes.
Step 3
Simmer the soup: pour in the vegetable broth, ensuring the vegetables are fully submerged. Bring to a boil, reduce the heat to a simmer. Cover and let cook for 15-20 minutes or until the cauliflower and carrots are tender.
Step 4
Stir in the heavy cream or coconut milk and let the simmer for 5 more minutes.
