6celery stalks
roughly chopped
4carrots
peeled, roughly chopped
1 headgarlic

2onions
peeld and thickly sliced
4potatoes
large, washed and cut into thick rounds
1 tspdried oregano
1 Tbspolive oil
salt

The lamb
Instructions
Step 1
Preheat oven to 170°C
Step 2
Toss vegetable ingredients together and place them on a large roasting pan
Step 3
Oil the lamb and season with salt and pepper
Step 4
Brown gently in a frying pan and remove
Step 5
Place the rosemary stem onto the vegetable, too with the lamb, pour in the stock and lemon juice and seal with foil
Step 6
Cook for 3.5 hours
Step 7
Check for tenderness.
Step 8
Serve with buttery, garlicky polenta
