Instructions

Step 1
In a skillet, cook the ground beef over medium heat until browned and the grease has evaporated, about 15 minutes.
Step 2
Add chili powder, cumin, oregano, garlic powder, salt, and pepper, and stir to combine. Cook for 5 minutes.
Step 3
Cook rice (quinoa) according to package instructions.
Step 4
Chop bell pepper, jalapeño, and onion into slices (not diced). Roast in the oven at 400°F for 10 minutes, flip, and then roast for another 10 minutes.
Step 5
Stir together corn, cilantro, tomatoes, lime juice, and salt.
Step 6
Combine all ingredients and top as you like with avocado/guac, salsa, cheese, lettuce, and sour cream. Garnish with cilantro and lime wedges.
