Instructions

Step 1
Prepare Flax Egg: In a small bowl, mix the ground flaxseed with water and let it sit for about 5 minutes until it thickens.

Mix Dry Ingredients: In a large bowl, combine the oat flour, protein powder, baking powder, baking soda, salt, and Swerve.

Combine Wet Ingredients: In another bowl, whisk together the almond milk, flax egg, vanilla extract, and apple cider vinegar.

Combine Wet and Dry: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix, as this can make the pancakes less fluffy. If the batter is too thick, add a bit more almond milk to reach your desired consistency.

Cook Pancakes: Heat a non-stick skillet or griddle over medium heat. Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, then flip and cook for another 1-2 minutes until golden brown.
