Step 1
In a medium bowl, beat the egg with a whisk until it’s a little fluffy.
Step 2
Whisk in all of the remaining ingredients, except for the for the pecans, and mix till smooth.
Step 3
Heat a large skillet or griddle to medium heat. Spray with nonstick spray.
Step 4
3. For each pancake, scoop 1/4 to 1/3 cup batter onto the heated surface.
Step 5
Cook pancakes until puffed and dry around the edges.
Step 6
Turn and cook other sides until golden brown.
