Beef and Bean Casserole

Ingredients

1 poundground beef
1 ½ cupsNavy Beans
3S/M potatoes
sliced with mandolin
2bell peppers
diced
1red onion
diced
mushrooms
2cloves garlic
minced
2 cupsshredded cheese
mozzarella and cheddar
1 cupsmilk
heavy cream
2 tablespoonsbutter
1 tablespoonflour
paprika
thyme
basil

Step 2
Cook the Ground Beef Mixture Heat a skillet over medium heat. Cook the ground beef until browned, breaking it apart as it cooks. Add the diced onion, garlic, and bell peppers. Cook until softened (5–7 minutes). Stir in the navy beans and season with paprika, thyme, salt, and pepper. Remove from heat.
Step 3
Prepare the Sauce (Optional) In a small saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute. Slowly whisk in the milk or cream until smooth. Cook until slightly thickened, about 2–3 minutes. Add a pinch of salt and pepper.
Step 4
Assemble the Casserole Layer half the sliced potatoes on the bottom of the dish. Spread half the beef and bean mixture over the potatoes. Drizzle with a little of the sauce and sprinkle with 1 cup of cheese. Repeat the layers with the remaining potatoes, beef mixture, sauce, and cheese.
Step 5
Bake Cover with foil and bake for 30 minutes. Remove the foil and bake for another 20–30 minutes, until the potatoes are tender and the top is golden and bubbly.
NOTES
Step 6
If using dry beans, ensure to soak the night before. Cook on stove high with plenty of water, covered for a >1 hour. Add lots of seasoning!!
Step 7
Needs MORE sauce next time. Could just use cream of mushroom, etc.
