Instructions

Step 1
Warm the oven
Step 2
Cover the chicken with bpa free plastic wrap and pound it until it’s very thin
Step 3
Scramble eggs add salt place in rectangular or circular container so the chicken can be dipped in it - same for the flour and breadcrumbs
Step 4
Heat olive oil in pan on medium - enough to cover thin slices so about 1 inch
Step 5
First dip the chicken in the flour, then the egg, then the breadcrumbs - set aside while oil heats up in pan
Step 6
The oil is hot enough when a wooden spoon gets little bubbles on it when dipped
Step 7
The first chicken to get fried will cook very quickly so move fast and cut it to check it after just 30 seconds on each side
Step 8
The oil will cool once it’s been used a bunch and then you’ll have to let it cook for at least a minute on each side
Step 9
Keep the oven warm and store the schnitzel in there until done frying the batch
Step 10
Serve with lingonberry jam!
