Japanese pancakes

Ingredients:
- 2 cups all-purpose flour
3 tablespoons granulated sugar
- 1 tablespoon baking powder
1/2 teaspoon salt
- 1 1/2 cups milk
- 3 large eggs
- 1 teaspoon vanilla extract
Butter or oil for cooking
Instructions:
1. In a large bowl, whisk together the flour, sugar, baking powder and salt.
2. In a separate bowl, whisk together the milk, eggs, and vanilla extract until well combined.
3. Pour the wet ingredients into the dry ingredients and gently fold until just combined. Be careful not to overmix; some lumps are okay.
4. Heat a non-stick pan or griddle over medium-low heat and add a small amount of butter or oil.
5. Pour 1/4 to 1/3 cup of batter onto the pan for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
6. Repeat with the remaining batter, adding more butter or oil to the pan as needed.
7. Serve the Japanese pancakes stacked and topped with your favorite syrup, fresh fruit, or whipped cream.
