Step 1
Prepare your ingredients. Peel, devein, and chop the shrimp as needed. Prepare and chop produce, such as the avocado, red onions, and cilantro.
Step 2
Add the cilantro lime dressing to the Southwest Salad mixture and mix well. Use as much or as little as you prefer. Mash up the avocado and season with salt.
Step 3
Place the shrimp in a pan with cooking oil on medium heat and season with your preferred seasonings (fiesta lime, garlic herb, etc.). If you are using raw shrimp, cook the shrimp about 3 minutes on each side. If you are using already cooked shrimp, place in the pan for about 2 minutes to heat up.
Step 4
In another pan, warm up the corn tortillas by placing them on the dry, heated pan until pliable.
Step 5
Once the tortillas are warmed, assemble the tacos. Start with the cooked shrimp then top with the salad mixture, mashed avocado, red onions, cilantro, and sour cream.
