Instructions

Step 1
Soak aduki beans and rice
Step 2
Cook beans and rice in 1 litre water for 50mins. Drain and reserve stock
Step 3
Fry onions for 3 mins, add carrots and cooked covered for 5 mins
Step 4
Add cooked beans and rice and saute for a few mins (do not burn)
Step 5
Add soy sauce, tom puree, herbs and 275ml reserved stock
Step 6
Bring to boil and simmer for 30mins (lid on)
Step 7
Transfer to casserole. Top with mashed potatoes and cook for 40mins at 180c
