Step 1
Melt butter in saucepan over low heat. Add leek and cook until slightly transparent. Add flour and stir until cooked through. Add milk and stir over medium heat until sauce thickens. Remove from heat, season with salt, pepper and nutmeg. Add grated cheese to taste. Add drained tuna. Spread rice evenly over baking tray, top with the tuna mornay. Cover with grated cheese and bake in moderate oven for 20-25 mins or until top is golden brown.
