Chorizo, Prawn, and Mango Noodles

Instructions

Step 1
Preparation - Chop Chorizo into small cubes and finely chop the onion. Reseed and finely chop the chilli and pepper.
Step 2
Heat oil in large frying pan or wok
Step 3
Add chorizo and cook for 2-3 minutes. Add the onion, pepper, and chilli and fry until cooked through and softened, 5-6 mins.
Step 4
Boil the kettle and put the noodles in a pan. Add the water and cook as per packet instructions.
Step 5
Add the cooked prawns and warm through, finally add the mango chutney and spinach. Cook gently until spinach is wilted.
Step 6
Drain noodles, serve with the chorizo & prawn sauce.
