Step 1
Drain and rinse cashews thoroughly
Step 2
Add cashews to a food processor or strong blender with 3/4 cup water, salt and garlic and pulse or blend until creamy and smooth taste and adjust seasoning as needed
Step 3
Using a spiralizer spiralizer zucchini into noodles
Step 4
Heat 1 Tbsp olive oil in a large skillet over medium high heat
Step 5
Once hot add zucchini noodles and cook for 2 - 3 minutes or until noodles are tender and still have a nice crunch
Step 6
Let noodles rest for about 3 minutes so they can release their moisture and transfer to a strainer to drain out excess water from the pan
Step 7
Wipe down the pan and add the other 1 Tbsp of olive oil to the pan over medium high heat add zoodles and about 1/2 of the cashew sauce and saute for 2 minutes stirring constantly or until heated through season with salt and pepper and serve enjoy
