Combine Wet Ingredients: In a medium bowl, whisk together the water (or milk and water) and egg until smooth and well combined.

Prepare Dry Ingredients: In a large mixing bowl, sift the flour and salt together. Make a well in the center of the flour mixture.

Mix Gradually: Pour the egg mixture into the well in the flour. Using a whisk or wooden spoon, start mixing from the center, gradually incorporating the flour from the edges. Slowly add the remaining liquid while mixing until you have a smooth, lump-free batter. This method ensures the batter is smooth and evenly combined, avoiding clumps of flour. Let the batter rest for about 15–30 minutes before cooking to improve the texture.

1. Prepare the Pan: Heat an omelette or non-stick pan over medium heat. Add a small knob of butter and let it melt, swirling the pan to coat the surface evenly.

2. Cook the Pancakes: Pour a small ladleful of the batter into the center of the pan. Tilt and rotate the pan quickly to spread the batter evenly into a thin layer.

3. Cook Until Golden: Cook the pancake for about 1–2 minutes, or until the edges start to lift, and the bottom is golden brown. Flip the pancake using a spatula or by tossing it (if you’re confident!) and cook for another 30 seconds to 1 minute on the other side.

4. Keep Warm: Once cooked, transfer the pancake to a warm plate dust it with cinnamon and sugar then cover it with a clean kitchen towel to keep it warm. Repeat with the remaining batter, adding a little more butter to the pan if needed.
