Step 1
Place the feta cheese for serving on a baking tray lined with parchment paper, drizzle it with maple syrup and oil, and bake in a preheated oven at 220°C (fan-forced) until the edges are golden.
Step 2
Squeeze out the excess liquid from the grated potatoes and zucchini, and mix them in a bowl with spinach, whisked eggs, feta, whole-grain flour, garlic, salt, and pepper.
Step 3
Divide the mixture into four portions and fry them one at a time on a hot pan with butter and a little oil. Flip them when one side is fully cooked, and fry the other side. Repeat until all portions are prepared.
