Instructions
Step 1
Whisk the egg whites in a bowl until soft peaks form. Set aside.

In a separate bowl, mix the egg yolks, oil, vinegar, and 2 cups of water until well combined.

Add the flour and salt to the mixture and slowly pour in the remaining 2 cups of water, stirring until smooth.

Gently fold in the egg whites to keep the batter light and airy.
Step 5
Finally, add the baking powder and mix lightly.
Step 6
Let the batter rest in the fridge for 30 minutes before cooking.
Step 7
Heat a non-stick pan over medium heat. Lightly grease it if necessary.

Pour a ladleful of batter into the pan, tilting it to spread the batter evenly.
Step 9
Cook for about 1–2 minutes until bubbles form and the edges lift slightly, then flip and cook for another minute.
Step 10
Serve warm with cinnamon sugar, syrup, or any preferred filling.
