Instructions

Step 1
Heat oil in a frying pan at a medium-high heat, add courgette, mangetout and spring onions and fry for 2-3 minutes before removing and setting aside.
Step 2
Add chicken mince to the pan, break up and fry off, alongside the Thai basil.
Step 3
Once cooked through, add the chilli paste, stir and allow to cook for 5 minutes.
Step 4
Add back the mangetout, spring onions and courgette to the mince, and heat through.
Step 5
While this is heating through, gently fry the eggs, ready to top the dish.
Step 6
Serve with rice, and top with the egg and chillies.
