Chicken meatball lazy Sunday roast

Chicken sage Stuffing meatballs with roast potatoes, creamy cabbage and gravy

Instructions

Step 1
Put sage and Stuffing mix in a bowl with 425ml boiling water and leave for 5min. Add chicken mince and mix well. Using olive oil on your hands and a ice cream scoop, make meatballs and put on parchment paper on tray. Put in oven on 200c for 35min.
Step 2
Make roasted potatoes
Step 3
Thinly slice cabbage and leek (or use red onion). With 40g butter, fry until soft. Add 200ml chicken stock, 1 tsp dijon mustard, salt and pepper and cook until finished. Add double cream until the desired consistency.
Step 4
Make gravy and you could add boiled carrots as well
