Ingredients: 1 lb (450g) ground beef 2 tablespoons olive oil 3 cloves garlic, minced 1 teaspoon Italian seasoning 1/2 teaspoon salt 1/4 teaspoon black pepper 1/4 teaspoon red pepper flakes (optional) 1 package (20 oz) refrigerated cheese tortellini 1 cup beef broth 2 tablespoons unsalted butter 2 cups fresh spinach 1/2 cup grated Parmesan cheese 2 tablespoons fresh parsley, chopped Directions: Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and fully cooked (about 6-8 minutes). Drain any excess fat. Add minced garlic, Italian seasoning, salt, black pepper, and red pepper flakes (if using) to the skillet. Cook for 1-2 minutes until fragrant. Meanwhile, cook the tortellini according to the package instructions. Drain and set aside. Add the beef broth to the skillet with the beef and bring it to a simmer. Let it cook for 2-3 minutes. Stir in the butter until melted, then add the fresh spinach. Cook until wilted, about 2-3 minutes. Add the cooked tortellini to the skillet and toss everything together until the tortellini is coated in the sauce. Stir in the grated Parmesan cheese and fresh parsley. Cook for another 1-2 minutes to combine. Serve hot, garnished with extra Parmesan and parsley if desired.
