Pat the pork belly cubes dry with paper towels and season generously with salt and pepper.

In a large skillet, heat olive oil over medium-high heat. Sear the pork belly pieces on all sides until they develop a nice golden crust (about 5 minutes total). This step adds extra flavor and texture.

Prepare the Slow Cooker:

Transfer the seared pork belly to your slow cooker.

Add the chopped onion, garlic, carrots, sweet potato, parsnips, and Brussels sprouts (if using).
