Instructions

Step 1
Dice onion and place in a fine-mesh strainer over a bowl. Sprinkle onions with salt (about a teaspoon's worth) and stir. Put to the side to let the onions release liquid. (This tames their flavor) Leave for at least 30 minutes while you go on to the next steps.
Step 2
Roughly chop cilantro, excluding the stems.
Step 3
Add rice, water, bouillon cube, paprika, cumin, garlic powder, and onion powder to a pot. Bring to a boil and then lower to a simmer and cook with a lid on until all the water is absorbed (30-45min), stirring occasionally.
Step 4
Take rice off the heat and let cool in pot for 20 or so minutes, stirring occasionally.
Step 5
Rinse off onions to remove the salt and discard the liquid in the bowl.
Step 6
In a large bowl, combine rice, refried beans, cheese, onions, corn, cilantro, and veggie powders.
Step 7
Lay out the flour tortillas and add an even amount of the mixture to each one. Roll each burrito and wrap in foil. Place wrapped burritos into an air-tight bag and freeze.
