1yellow onion

1red bell pepper

1 x 14 ouncecan low sodium kidney beans

1 tablespoonolive oil

1 poundlean ground beef

2 teaspoonsgarlic powder

1 tablespoonchili powder

1 teaspoonground cumin

½ teaspoonkosher salt

1 x 8 ouncecan no salt added tomato sauce

1 x 14 ouncecan no salt added diced tomatoes

4 ouncesunsalted tortilla chips

Prepare Ingredients
Step 1
Rinse all produce. Peel onion, halve, and cut into small dice. Halve bell pepper lengthwise, discarding seeds and stem. Cut into small dice. Drain and rinse beans.
Cook Vegetables and Beef
Step 2
Heat olive oil in a pot over medium-high heat. When oil is shimmering, add onion and bell pepper, and cook until vegetables begin to soften, 3-4 minutes. Add ground beef, garlic powder, chili powder, cumin, 1/2 teaspoon salt, and black pepper, as desired. Cook, breaking up beef until browned, 5-6 minutes.
Simmer
Step 3
Add tomato sauce, diced tomatoes, beans and 1 1/2 cups water. Simmer uncovered on medium low for 20 minutes. Adjust chili powder, garlic powder, cumin, and black pepper as desired. Divide chili among serving bowls and serve with tortilla chips.
