Instructions
Step 1
I boiled my beetroots for around 30 minutes with the skins on. Alternatively, you can roast or steam them.
Step 2
I left them to cool slightly and removed the skins.
Step 3
I sliced my beets and sprayed with fry light oil and then placed in my air fryer for 8 minutes on 200c.
Step 4
Once cooked, I removed the beetroot from the air fryer and popped into a blender with a tin of chickpeas, 2 tablespoons of tahini, the juice of one large lemon, two grated cloves of garlic and plenty of salt and pepper.
Step 5
Save some of the chickpeas for serving.
Step 6
I gave it a blitz in the food processor until smooth then served in a bowl with a few chickpeas on top and drizzled with olive oil.
