For the Bowls, cooked, white, brown, or

1 cupblack beans
cauliflower rice

1 cupcorn

½ cupcherry tomatoes

1avocado

¼ cupred onion

¼ cupfresh cilantro

Shredded cheese

Instructions
Step 1
Prepare the Chicken:
Rub the chicken breasts with olive oil, taco seasoning, salt, pepper, and lime juice. Let it marinate for at least 15 minutes (or up to an hour for more flavor).
Heat a skillet over medium heat and cook the chicken for about 5-6 minutes per side, until fully cooked (internal temperature of 165°F/75°C). Remove from heat and let it rest for a few minutes before slicing or shredding.
Step 2
Assemble the Bowls:
Divide the cooked rice between bowls. Top with black beans, corn, cherry tomatoes, avocado, red onion, and cilantro.
Add the cooked chicken slices or shreds on top of each bowl.
Garnish with your choice of toppings: shredded cheese, salsa, sour cream, and lime wedges.
