You Po Enoki Mushrooms 油泼金针菇
I leverage the delicious sauce from Omnivore’s Cookbook that is used there on hand pulled noodles to dress lightly blanched enoki mushrooms. I found that this dish became even more flavorful as it sat and was delightful as it cooled.

2 packagesenoki mushrooms
fresh

1 tablespoonlight soy sauce

1 tablespoonchinkiang vinegar

¼ teaspoondark soy sauce

1 teaspoonsugar

1 teaspoonsesame oil

1green onion
white part minced green part sliced for garnish

3 clovesgarlic
grated

1 tablespoonchinese chili flakes

1 tablespoontoasted white sesame seeds

¼ teaspooncumin powder

¼ teaspoonground sichuan peppercorn
optional but recommended

3 tablespoonspeanut oil
Instructions
Step 1
Trim and Blanch the enoki mushrooms
Step 2
Mix the sauce base (soy sauces, vinegar, sesame oil, sugar)
Step 3
Dress the enoki in the sauce base
Step 4
Spread the spices and aromatics on top of the mushrooms—white part of green onion, garlic, chili flakes, cumin, sesame seeds, ground sichuan peppercorn.
Step 5
Heat the peanut oil and pour over the spices/aromatics doing best to cover it all, and stir to mix while the oil is hot
Step 6
Garnish with cilantro
