Mushroom stroganoff

Ingredients:
- 8 oz cavatappi pasta (or your favorite pasta)
- 2 cups mushrooms, sliced (cremini or button mushrooms)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 cup vegetable broth
- 1 cup canned coconut milk (or unsweetened almond milk)
- 2 tablespoons soy sauce or tamari
- 1 tablespoon nutritional yeast (optional)
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Directions:
1. Cook the Pasta: Begin by boiling a large pot of salted water and cook the cavatappi according to the package instructions. Once done, drain and set aside.
2. Sauté the Vegetables: In a large skillet, heat a splash of oil over medium heat. Toss in the chopped onion and sauté until it turns translucent. Then, add the minced garlic and sliced mushrooms, cooking until the mushrooms are beautifully browned and tender, which should take about 5-7 minutes.
3. Make the Sauce: In the same skillet, add the vegetable broth, coconut milk, soy sauce, nutritional yeast (if using), thyme, smoked paprika, salt, and pepper. Give it a good stir to combine, then bring the mixture to a gentle simmer. Let it cook for about 5 minutes, allowing those flavors to meld together.
4. Thicken the Sauce: Stir in your cornstarch mixture and let it cook for an additional 2-3 minutes until the sauce thickens to a luscious consistency that's just right!
5. Combine: Now, it's time to bring it all together! Add the cooked cavatappi to the skillet, tossing everything together until the pasta is wonderfully coated in that rich sauce.
6. Serve: Give it a taste and adjust the seasoning if needed. Serve hot, garnished with fresh parsley if you like a little extra flair.
