Instructions
Step 1
Preheat oven to 400F and bake potatoes 1 hour or until done. Remove and cool.
Step 2
Melt butter in pot and saute onions until light brown. Add flour fo onions and stir to make roux.
Step 3
Add stock, water, cornstarch, mashed potatoes, and spices to pot and bring to a boil. Reduce heat; simmer 5 minutes.
Step 4
Chop potatoes to make chunks.
Step 5
Add potatoes and half and half. Bring to a boil; reduce heat and simmer 15 minutes or until thick.
