Instructions
Step 1
Saute the onion in the olive oil until soft. Add the potatoes and continue frying until they start to brown.
Step 2
Add the vegetable stock and bring to the boil.
Step 3
Add the broccoli and let it get back up to boil.
Step 4
reduce the heat and leave to simmer for approx. 25 minutes, until the potatoes and the broccoli ate soft.
Step 5
Puree with a hand blender. Add the cream and season to taste with salt, pepper, and thyme.
