Instructions
Step 1
In a large pot, sauté onion, fennel and carrot with a drizzle of olive oil for about 5 minutes.
Step 2
Add the zucchini, garlic, parsley stems and chili flakes and sauté for another 3-5 minutes.
Step 3
Now add the potatoes and coriander, stir and cook for a few more minutes.
Step 4
Deglaze with veg stock, add the cashews and parsley leaves and simmer for about 20-25 minutes until the potatoes are soft.
Step 5
Blend on medium speed until completely smooth.
Step 6
Serve with your favorite toppings or as is and enjoy!
