Step 1
Place rice through parsley in 4 qt casserold. Stir, bring to a boil. Salt & pepper chicken. Lay chicken on top of rice. Lower heat to a simmer; cover tightly & cook 45-60 minutes, til water is absorbed & chicken is tender. Saute optional ingredients & add to rice before serving.
