Instructions
Step 1
Preheat oven to 180ºC
Step 2
Cut pumpkin into slices and roast for 20 minutes til soft. (Add oil if you wish)
Step 3
Pan fry peppers and onion. Cook til starting to soften (not too soft)
Step 4
Whisk eggs, adding 1 tablespoon of water per egg. Salt and pepper as required.
Step 5
Once pumpkin is cooked, chop into bite sized pieces.
Step 6
Add all vegetables and bacon into a lined or greased dish and spread evenly. 9"x 9" or equivalent
Step 7
Add dollops of cottage cheese over the vege mix. Pour egg mix over.
Step 8
Bake in oven for 45min - could be longer if your dish is deep.
