SESAME CHICKEN THIGHS WITH SPICY SATAY SLAW

This is one of mine and Rosie's absolute favourites - we love a satay, and we love spicy food even more, and using chill oil in the sauce really gives it a kick. This is perfect to make on the barbecue, too.

Ingredients

1 Tbspsesame oil

4skinless boneless chicken thighs
quantity depends on size

3 Tbspsesame seeds

3 Tbspsoy sauce

1 Tbsphoney

100gsugar snaps
cut in half

0.25red cabbage
shredded

2carrots
julienned, or very thinly sliced into batons

0.5cucumber
julienned, or very thinly sliced into batons

fresh mint leaves

fresh coriander leaves
Slaw dressing
Instructions
Step 1
Heat the sesame oil in a large frying pan, then add the chicken thighs. Cook for 4-5 minutes until golden and cooked through, then add the sesame seeds, soy sauce and honey and cook until sticky and coated, another 2-3 mintues.
Step 2
In the meantime, mix together the dressing for the spicy satay slaw.
Step 3
Toss together the sugar snaps, cabbage, carrots, cucumber and herbs and drizzle over the dressing.
Step 4
Plate up the chicken thighs with a lime wedge and plenty of spicy slaw.
