Instructions
Step 1
Beat the egg in a small bowl. Gradually whisk in the flour, followed by the milk, until smooth.
Step 2
Stir in the clementine zest and sugar (if using).
Step 3
Heat a non-stick frying pan over medium heat with a little butter or oil.
Step 4
Pour half the batter into the pan for one large pancake, spreading it evenly.
Step 5
Cook for 2-3 minutes until bubbles form and the edges look set, then flip and cook the other side for another 1-2 minutes. Repeat for the second pancake.
Step 6
Mix the yoghurt with honey to taste.
Step 7
Top each pancake with the honey-yoghurt mixture and clementine segments.
